My Background

I am currently the Head Chef at 1 Hotel Brooklyn Bridge, bringing over a decade of luxury hospitality and restaurant experience as I oversee the property's restaurants and bars. My culinary career started early on growing up in Long Island, New York, inspired by my Grandmother’s Filipino cooking and her love and respect for quality and tradition.  I moved to Miami to attend Johnson & Wales University where I received my degree in Culinary Arts. I later held positions in some of Miami’s best five-star hotels and restaurants where I cultivated a mastery of classical as well as modernist cooking techniques.
Crowned Food Network’s Chopped Champion in 2021 I am excited to bring the energy and creativity to my menus featured in The Osprey, Harriet’s Lounge and Rooftop, and Neighbor's Café. Sustainability and the freshest local ingredients are the focus of all my food programs as well as reducing waste and our carbon footprint, we have a world to save!
